The aim of this work was to create a conceptual design for a culinary academy together with a restaurant complex. The project covers adaptation and extention of a monument listed buiding of the former Gymnasium designed by Karl Friedrich Schinkel in 19th century.
The project deals with the issue of the need to conduct an urban regeneration process in the area of Stare Przedmieście in Gdańsk, by introducing a new function - forming an educational and culinary hive - both serving inhabitants and attracting visitors.
The educational function was placed in the existing part of the object with several classrooms equiped in necessary cooking utilities, a library and a multifunctional space prepared to host workshops for visitors.
An auditorium was placed in the new part of the building along with the main restaurant, coffeehouse, canteen and experimental restaurant run by students.
The main challenge was to maintain balance between adjusting the building to serve modern function and following the rule of minimal intervention in historical structure.
A garden with edible plants has also been designed, to serve the school’s needs and form an atracive space for pedestrians.
